Join us for an exclusive Winemaker’s Dinner at Norda Oslo as we welcome Giant Steps, an iconic wine producer from Australia’s renowned Yarra Valley. The evening will feature elegant flavors, carefully selected wines, and the stories behind some of the world’s most highly regarded expressions of Chardonnay and Pinot Noir.

This evening, we will meet Melanie Chester, Head of Winemaking & Viticulture since 2021, who will guide us through the wines and share insights into the philosophy, vineyards, and craftsmanship behind each bottle.

Giant Steps was founded in 1997 by wine pioneer Phil Sexton in his pursuit of the perfect terroir for cool-climate Chardonnay and Pinot Noir. He found his “holy grail” in the hills near Gruyere in the Yarra Valley, where he planted the Sexton Vineyard. The name Giant Steps is inspired by John Coltrane’s legendary jazz album, a fitting metaphor for the ambition and quality that define the wines. In 2025, the winery was awarded Halliday Winery of the Year as well as Pinot Noir of the Year, confirming its world-class standing.

Aperitif:
Giant Steps Chardonnay 2023

1st Course – Beef Tartar
Sauce flavored with grilled onion, crispy chili oil, Jerusalem artichoke chips, parmesan, and cress

Lightly grilled winter cabbage, grilled butter sauce with trout roe and chives, fermented celery root

Parsley root (grilled, purée, and pickled), bone marrow crumble, and port wine sauce

4th Course – Soft Carrot Cake
Cream cheese ice cream, sea buckthorn compote, orange and carrot gel, oat crumble, and salted caramel
